100 Days of Gratitude: Day 73

Well, I’ve finally succumbed to the bugs and diseases that have been plaguing my housemates for the last few months – seriously I don’t think there’s been a week when one or the other or both has not been sick with coughs, colds, flu and stomach upsets!

I’ve not been quite 100% for a few weeks with a low grade stomach…thing…don’t know what to call it, but I get mild stomach pains  immediately after I’ve eaten and couple of people at work mentioned yesterday that I looked sick – the box of tissues were never very far away from me and today I just feel flat and tired.

As you know  I definitely subscribe to the mantra ‘Feed a cold, Starve a fever’, so having done the admin, taken the cat for his weekly vet visit, done my posing practice and HIIT, it was time to kick my immune system up a notch and make the heartiest, cold kicking nutritious chicken soup

Grateful for Chicken Soup, today!


The Most Nutritious Chicken Soup EVER

(4 serves)

  • 250g Chicken (sliced)
  • 150g Broccoli
  • 150g Cauliflower
  • 8 Brussels Sprouts
  • 150g Green Beans
  • 1 bunch Asparagus
  • 1 Small Carrot
  • 1 Small Leek
  • 1 medium Onion
  • 2/3 cloves Garlic
  • 1 tsp Ground Ginger
  • 1 tsp Tumeric
  • 1 tsp Fennel Seeds
  • ½ tsp chilli (optional)
  • Lemon Juice
  • Salt
  • Chicken Stock cube
  • Veggie Stock cube
  • 1 litre Water
  • 1tsp double cream/serve (optional)



1)      Chop up the onion roughly and fry with the garlic, lemon juice, fennel seeds and salt for 2 mins, add the chicken

2)      Put all the vegetables, ginger, turmeric into a pot and pour over the stock, bring to the boil

3)      Add the chicken to the pot and simmer until all the veggies are cooked.

4)      Serve
